Banana Bread
Ingredients
3 ripe bananas
2 cups ground almonds
4 eggs
1/2 Cup Bluberries
1/4 Cup Walnuts
1/4 Cup of melted coconut oil
1/4 cup coconut sugar
1 teaspoon of vanilla extract
1 tablespoon of arrowroot powder (optional)
1/2 teaspoon of bicarbonate of soda
Pinch of salt
Method
Preheat the oven to 175 C / 350 F and then put the coconut oil to melt in bowl for a couple of minutes.
Mash two of the bananas in a bowl and when smooth enough, whisk in the 4 eggs.
Take the coconut oil out if the oven and set aside to cool.
Whilst the coconut oil is cooling, add the almond flour, vanilla extract, coconut sugar, bicarbonate of soda, arrowroot and salt. Whisk well. Once the coconut oil is completely cool, add to the mixture.
Break the walnuts in to pieces and add to the mixture. Add the blueberries and blend well.
Grease the bread tin and pour mixture in.
Slice the remaining banana and place on top. You can also half a few walnuts and add to the top. I also add dark chocolate chips.
Bake in the oven for 45 minutes and once cooked allow to cool and it is ready to serve.
