Courgette & Broccoli Soup

Ingredients

  • 1 medium broccoli
  • 2 medium zucchini
  • 1 onion
  • 5 cloves of garlic
  • 1 litre vegetable stock works
  • 1 teaspoon of sea salt
  • 1/2 teaspoon pepper
  • 1 teaspoon of ground cumin
  • 1/2 can of full fat coconut milk
  • 1 tablespoon of olive oil

Directions

  1. Chop the onion, broccoli, zucchini, and garlic cloves.
  2. Heat the olive oil in a deep pan and sweat the onion and crushed garlic until soft.
  3. Add the chopped broccoli, zucchini as well as the salt and pepper. Cook on medium until the vegetables are soft.
  4. Add the vegetable stock cover. Simmer on a medium heat for about 30 minutes. Switch the heat off and let it cool down for 10 minutes.
  5. Add the coconut milk and cumin and blend. It is ready!
  6. Pour it back in the saucepan and heat.
  7. Serve with a side of sourdough bread.
