Spelt Pancakes
Ingredients
Olive Oil Spray
300 ml Almond Milk
150g Brown Spelt Flour
1 Medium Egg
Pinch Salt
Method
Put flour in mixing bowl and add the almond milk slowly. Whisk together and add the egg and pinch of salt. Whisk until smooth with no lumps. Cover the bowl with cling film and refrigerate for 30 minutes.
Once mixture has been refrigerated, heat medium sized frying pan. Spray the hot pan with two squirts of olive oil. Put a ladel full of mixture in the pan and make sure it is spread evenly but slowly rotating the pan until it is thinly covered with the mixture. Fry until it is brown which should be a minute or so. Once browned, flip over to the other side and wait for that to brown. Once both sides are browned, remove and keep repeating with the rest of the mixture until it is finished.
